What actually sets a turkey's roasting time
A turkey cooks from the outside in, and the clock is set by how long heat takes to crawl to the deepest, coldest point in the bird — the joint where the thigh meets the body. Everything else is secondary. That is why roasting time does not scale in a straight line with weight: doubling the weight of a bird does not double the distance from surface to thigh joint, so a 20 lb turkey takes far less than twice as long as a 10 lb one.
Three things move the number. Weight is the proxy for how deep that cold spot sits. Stuffing adds a dense, cold mass in the cavity that has to be heated by conduction from the inside surface of the bird, which is the slowest heat path in the whole assembly — that is why a stuffed bird needs an extra 15 to 45 minutes at the same weight. Oven temperature sets the driving force: the bigger the gap between the oven and the meat, the faster heat flows in.
What does not move it much: whether the bird is fresh or was thawed, whether it was brined, or whether you basted. Those change flavour, moisture and skin, not the arrival time of heat at the thigh. How this calculator turns weight into a time
The base number comes straight from the roasting table published by USDA's Food Safety and Inspection Service, which gives approximate times at 325 °F for a refrigerated, ready-to-cook bird. That table is a set of bands: 12 to 14 lb takes 3 to 3¾ hours unstuffed, 18 to 20 lb takes 4¼ to 4½ hours, and so on.
This calculator reads those bands as a continuous curve. The low end of each time range is attached to the low end of its weight range and the high end to the high end, then the value in between is interpolated. Because every band's top weight is the next band's bottom weight, and their times agree there, the curve is continuous: a 14 lb bird gets 3¾ hours whichever band you approach it from.
Oven temperature is handled separately, because USDA publishes times at 325 °F only. For a body warming towards a surrounding medium, the temperature at the centre approaches the oven temperature exponentially, so the time to reach a fixed core temperature is proportional to

Take the ratio of that quantity at your oven temperature to its value at 325 °F, and you have a scaling factor. With a 40 °F refrigerated start and a 165 °F target, the denominator is ln(285/160) = 0.5773. At 325 °F the factor is exactly 1 and you get the USDA number unchanged; at 350 °F it is 0.894, and at 425 °F it is 0.680. That is the whole model. It assumes the skin reaches oven temperature quickly, which is close enough over a three-hour roast but not exact — which is why the calculator schedules a thermometer check well before the estimate runs out.
Worked example: a 16 lb unstuffed turkey carved at 4 pm
You have a 16 lb bird, you are baking the stuffing separately, and you want to carve at 4:00 pm after a 30-minute rest.
- Find the USDA band. 16 lb sits in the 14 to 18 lb band, which runs 3¾ to 4¼ hours unstuffed.
- Interpolate inside it. 16 lb is halfway from 14 to 18, so the time is halfway from 3.75 to 4.25 hours: 3.75 + 0.5 × 0.50 = 4.00 hours, or 240 minutes.
- Apply the oven factor. At 325 °F the factor is 1, so the roasting time stays 240 minutes. That is 15.0 minutes per pound.
- Work back from carving. Carve at 4:00 pm. Subtract the 30-minute rest: out of the oven at 3:30 pm. Subtract 240 minutes: into the oven at 11:30 am.
- Place the checkpoints. Two-thirds of 240 minutes is 160 minutes, so tent the breast with foil around 2:10 pm. Four-fifths is 192 minutes, so take the first thigh reading at 2:42 pm.
Now suppose the oven is busy and you push it to 350 °F. The factor becomes ln(310/185) ÷ ln(285/160) = 0.5162 ÷ 0.5773 = 0.8942, so the roasting time falls to 240 × 0.8942 = 215 minutes, three hours and 35 minutes. You gain 25 minutes and give up some of the margin for error, because a hotter oven drives the breast past done sooner relative to the thigh.
How to read the result, and why the thermometer wins
Treat the roasting time as a schedule, not a verdict. Two birds of the same weight can differ by 45 minutes because of shape, how cold the bird was when it went in, how often the oven door opened, and how far your oven's thermostat drifts from its dial. The estimate exists so you know when to start and when to start checking — not when to stop.
The finish line is 165 °F. USDA FSIS sets a safe minimum internal temperature of 165 °F for all poultry, measured in the innermost part of the thigh, the innermost part of the wing, and the thickest part of the breast. All three have to reach it. The thigh is almost always last, so that is where you probe first; push the tip in without touching bone, which reads hot and lies to you.
Expect the estimate to be roughly right in the 13 to 16 minutes per pound range at 325 °F for an unstuffed bird, falling as the bird gets bigger: the calculator gives 15.0 min/lb at 12 lb and 13.5 min/lb at 20 lb, because time grows more slowly than weight. If your bird hits temperature at half the predicted time, suspect the thermometer or a probe touching bone. If it is an hour behind, check that the oven is actually holding its setting with an independent oven thermometer — a 25 °F drift low adds about 12% to the time.

Stuffing is the food-safety weak point
USDA FSIS recommends cooking stuffing in a separate dish. Inside the cavity it is the last thing to heat, it sits against raw poultry, and it spends a long time in the temperature range where bacteria multiply. If you stuff anyway: stuff loosely and only immediately before the bird goes in the oven, never the night before; and confirm with a thermometer that the centre of the stuffing reaches 165 °F, not just the thigh. Very often the thigh is done and the stuffing is not, which forces you to keep roasting and overcook the breast.
Mistakes that wreck the timing
- Starting from a partly frozen bird. The single biggest cause of a turkey running hours late. A frozen core absorbs enormous energy melting ice before its temperature moves at all.
- Trusting the oven dial. Domestic ovens routinely sit 15–30 °F off their setting. A separate oven thermometer on the same shelf as the bird costs almost nothing and removes the largest single source of error.
- Probing into bone. Bone conducts heat faster than muscle, so a probe touching it reads high and you pull an underdone bird. Aim for the thickest muscle of the inner thigh.
- Opening the door to baste. Every opening dumps oven heat and adds time. Basting does not make the meat juicier — it wets the skin, which then has to dry out again.
- Skipping the rest. Carving straight away spills juice onto the board. Twenty to forty minutes tented loosely costs you nothing; the bird stays hot for far longer than most people expect.
- Roasting below 325 °F. USDA guidance is explicit that poultry should not be cooked in an oven set below 325 °F, because the bird spends too long in the danger zone on the way up.
- Planning with no slack. Build in 45 minutes of float. A bird that finishes early rests happily under foil; a bird that finishes late holds up the whole meal.
