Why yield, not weight, decides how many people a turkey feeds
Ask how many people a 15 lb turkey feeds and the honest answer starts with a different question: how much of those 15 pounds is meat you can put on a plate? For a whole bone-in bird, under half.
Two losses stack up. First, roasting drives off moisture and renders fat. USDA's cooking-yield work puts whole roasted turkey at roughly three-quarters of its raw weight after cooking. Second, a large share of what remains is not edible: frame, wings you will not carve, skin many guests decline, and the neck and giblets. USDA's refuse factor for whole turkey is a little over a quarter. Multiply the two and you land near 55% for meat plus skin, and near 47% once you take off the skin and the scraps that end up in the stock pot rather than on the plate.
That 47% is the number this calculator uses by default, and it is the reason a 15 lb bird gives about 7 lb of cooked meat — 113 ounces, which is fourteen 8-ounce plates with nothing left over. If you have ever bought to the classic rule and found the platter thin, this is where the pounds went.
The yield also explains why the familiar rules of thumb vary so widely. One pound per person, one and a quarter, one and a half: each is really a statement about portion size and leftovers with the yield already folded in. At a 47% yield, a pound of raw bird is 7.5 oz of cooked meat, so the one-pound rule feeds a modest plate and no leftovers, while the one-and-a-half-pound rule feeds a generous plate with sandwiches for the next day. Neither is wrong. They answer different questions, and neither survives a switch to a boneless roast, where the yield is closer to 72% and a pound of raw meat becomes 11.5 oz on the plate.
Working backward from the plate
The calculation runs in the order you actually think about the meal, which is the opposite of the order the rules of thumb use.
Start with the plate. A restaurant protein portion is 6 oz cooked. A holiday plate where turkey shares space with stuffing, potatoes and vegetables is comfortably 8 oz. If turkey is the only substantial protein and the sides are light, 10 oz is realistic. Children eat roughly half an adult portion up to about ten years old, which is what the default child factor of 0.5 represents; move it towards 1 for teenagers, who often eat more than the adults.
Add the leftovers you actually want. This is a decision, not a fudge factor. Twenty-five per cent gives you enough for one round of sandwiches. Fifty per cent covers two days of sandwiches and a pot of soup. One hundred per cent means you are cooking a second meal deliberately, and it doubles the bird.
Divide by the yield. This is the step every pounds-per-person rule skips. Whole bone-in bird: 47%. Bone-in breast: about 65%, because there is far less frame relative to meat. Boneless breast roast: about 72%, since only cooking loss applies. Change this one number and the raw weight moves by a third or more, which is why the field is exposed rather than hidden.
Then split the order if it is too big. Above about 20 lb a whole turkey stops being a good cooking proposition: the legs need much longer than the breast at that size, so one or the other is wrong when you carve, and the bird needs five to six days in the refrigerator to thaw. The calculator divides the total across as many birds as it takes to keep each one under your cap.
Worked example: twelve adults and four children, with sandwiches
Sixteen people are coming: twelve adults and four children. You want a generous 8 oz of cooked meat on each adult plate, children at half that, and enough left for sandwiches the next day — call it 50% extra. You are buying a whole bone-in bird, so the yield is 47%.
- Adult-equivalent guests. 12 + (4 × 0.5) = 14.0.
- Meat on the table. 14.0 × 8 oz = 112 oz.
- Add the leftovers. 112 × 1.50 = 168 oz of cooked meat.
- Convert to pounds. 168 ÷ 16 = 10.5 lb of cooked meat.
- Divide by the yield. 10.5 ÷ 0.47 = 22.34 lb of raw bone-in turkey. Round up to 22.5 lb.
- Split the order. 22.5 ÷ 20 = 1.125, so you need two birds of about 11.3 lb each.
- Check what that delivers. 22.5 × 0.47 = 10.58 lb of cooked meat, which is 169 oz, or 21.2 portions of 8 oz. Sixteen people eat 14 adult-equivalent portions, so you finish with about seven portions in the fridge.
The implied rate is 22.34 ÷ 16 = 1.40 lb per head, which sits neatly inside the traditional 1 to 1.5 lb range — as it should, since the traditional range was built for roughly this plate and roughly this appetite. The advantage of doing it this way is that when you change one assumption, you can see exactly what it costs: drop the leftovers to 25% and the raw weight falls to 18.6 lb, a single bird instead of two.
Reading the result, and when to buy two birds
The raw weight is what you order; the cooked meat figure is what you can promise. If the cooked figure looks thin next to the number of people at the table, the fix is the portion size or the leftovers setting, not the bird. Buying a bigger bird to compensate for an unrealistic yield assumption is how families end up with a 26 lb turkey and a week of dry sandwiches.
The pounds-per-person figure is your sanity check. It should land between about 1.0 and 1.5 for a whole bone-in bird at normal portions. Below 1.0 you are planning a light plate with no leftovers; above 1.5 you are either feeding very large appetites or double-counting leftovers. The calculator flags anything above 2.0.
Two medium birds beat one large one more often than people expect. The obvious advantage is even cooking: a 22 lb bird's legs need substantially more time than its breast, and no amount of foil-tenting fully resolves it. The less obvious advantages are logistical. Two 11 lb birds thaw in about half the time of one 22 lb bird, roast in far less time, fit in an ordinary oven side by side, and let you carve one for the table while the second rests for the platter. The one real cost is oven space, and a slightly lower yield because you have two frames instead of one.
Whole bird is not always the right form. If your result comes out under about 10 lb, whole turkeys that small are uncommon and dry out fast. A bone-in breast at a 65% yield gives the same amount of white meat from far less raw weight, roasts in half the time, and suits a table that does not care about the carving ceremony. Enter 65 in the yield field and read the new raw weight.

The portions column exceeds the guest count by exactly the 25% leftovers allowance. Change the portion size, the leftovers or the yield and every figure moves proportionally.
Where turkey sizing goes wrong
- Applying a whole-bird rule to a breast. The pounds-per-person rules assume you are paying for bone. A bone-in breast yields about 65% and a boneless roast about 72%, so the same table needs far less raw weight.
- Counting leftovers twice. If you already chose a generous 10 oz portion, adding 50% leftovers on top buys a very large bird. Pick a realistic plate first, then decide the leftovers separately.
- Forgetting the vegetarians and the children. Four children at half portions are two adults, not four, and a table of sixteen with three vegetarians is a table of thirteen for turkey purposes.
- Buying one enormous bird to save money per pound. The per-pound price falls, but the yield does not improve, the thaw takes a week, and the legs and breast cannot both be right.
- Ignoring the second protein. If there is also a ham or a beef roast on the table, adult turkey portions drop to 5 or 6 oz and the bird shrinks accordingly.
- Assuming the giblets and the neck are meat. They are stock and gravy, and the yield figure already treats them as refuse. Counting them as portions is how a platter comes up short.

How the rest of the plan follows from the bird size
Sizing the bird is the first decision because everything else depends on it. The weight sets the thawing schedule, and that is measured in days: a 22 lb bird needs five and a half days in the refrigerator at the conservative planning rate, while two 11 lb birds need under three. If the thawing window does not fit your calendar, the answer is to change the bird, not to rush the thaw.
The weight then sets the roasting time and the oven schedule, which in turn determines when everything else can use the oven. Poultry is cooked to a food-safety endpoint rather than a doneness preference — 165 °F in the thickest part of the thigh — which is a different problem from timing a beef roast to a chosen doneness, where you are aiming for a temperature well below any safety threshold and have to subtract a carryover rise.
Caterers use exactly the same arithmetic under a different name. Yield testing — buying a sample case, breaking it down, weighing the edible portion and dividing — is how a professional kitchen turns a purchase price into a plate cost, and the edible yield field on this page is that number.
