What dry brining does that salting at the pan does not
A dry brine is salt applied by weight, well ahead of cooking, and left to do three separate things. First, the salt draws moisture to the surface by osmosis. That moisture dissolves the salt into a concentrated brine, and within an hour or two the liquid is reabsorbed carrying the salt with it. Second, over the following hours the salt diffuses through the muscle, so the seasoning is even from surface to centre rather than concentrated on the outside. Third, salt partially denatures the muscle proteins, which reduces the amount of water squeezed out when those proteins contract during cooking.
That third effect is the one people notice. A dry-brined roast loses less weight in the oven and reads as juicier at the same internal temperature, without adding a drop of water. A wet brine achieves a similar mouthfeel by a different route: it pumps the meat full of salted water, which adds weight, dilutes flavour, and makes crisp skin much harder to achieve.
Because the surface dries out during an uncovered refrigerated rest, dry brining also solves the browning problem. Dry skin conducts heat to itself rather than spending energy evaporating water, so it crisps early and evenly, and a dry steak surface sears rather than steams.
None of this is curing. There is no nitrite, no shelf stability, and no preservation claim. A dry brine is a seasoning and texture technique for meat that goes into a refrigerator and then into a hot oven or pan.
Why the percentage is by weight, and what a percentage point tastes like
The whole method is one multiplication: salt equals meat weight times the percentage. Weighing works where volume does not, because salt crystals differ enormously in bulk density. Diamond Crystal kosher salt is hollow, flaky and light at about 2.8 g per teaspoon; Morton coarse kosher is denser at about 4.8 g; fine table salt packs to about 6.0 g. Follow a recipe calling for "two tablespoons of kosher salt" with the wrong box and you are more than twice as salty or half as salty as intended.
Percentage is also the only figure that scales. A 12 lb turkey and a 6 oz chicken breast get the same 1%, which is 54 g for one and 1.7 g for the other. There is no table to memorise and no arithmetic to redo when the bird is bigger than last year.
What the number means on the plate is worth calibrating once. 0.5% is gently seasoned — the meat tastes of itself, and you would reach for the salt at the table. 1.0% is the level most people describe as correctly seasoned, and it is the sensible default for anything you are unsure about. 1.5% is assertive and appropriate for something served in thin slices or with plain starch. 2% and above is charcuterie territory, where salt is doing structural work rather than seasoning, as in the sausage seasoning calculation.
Sugar is optional and behaves differently. At 0.25–0.5% it contributes browning through the Maillard reaction and softens the perception of salt without making the meat sweet. It does not penetrate as fast as salt — sucrose is a far larger molecule — so it stays closer to the surface, which is exactly where you want the browning.
Worked example: a 14 lb turkey at 1%, and a pair of steaks at 0.75%
Thanksgiving bird, 14 lb, dry brined at the standard 1%, salted with Diamond Crystal kosher.
- Convert the weight. 14 × 453.59237 = 6,350.3 g.
- Apply the percentage. 6,350.3 × 1 ÷ 100 = 63.5 g of salt.
- Convert to a scoop if you must. 63.5 ÷ 2.8 = 22.7 teaspoons, which is about 7½ tablespoons or a scant half cup. The same 63.5 g is only 13.2 teaspoons of Morton kosher — a difference that would ruin the bird in either direction.
- Distribute it. Roughly half on the breast, a quarter on each leg quarter, working some under the skin. Sprinkle from a height so it lands evenly.
- Rest. Uncovered on a rack in the refrigerator for 24 to 72 hours. Do not rinse before roasting; rinsing washes off the seasoning you just calculated and re-wets the skin.
Two 12 oz ribeyes, dry brined at 0.75% because they are going into a pan with butter and a pan sauce.
- Weight. 2 × 12 oz = 24 oz × 28.3495 = 680.4 g.
- Salt. 680.4 × 0.75 ÷ 100 = 5.1 g, which is 1.8 teaspoons of Diamond Crystal for both steaks together.
- Rest. One hour is enough for a steak under an inch thick; overnight uncovered is better if you want a drier surface for the sear. Either works — what does not work is 40 minutes, long enough to pull moisture out and not long enough to reabsorb it.
How long to rest, and how to tell it worked
Salt moves through muscle slowly and at a rate that barely depends on the species. What varies is how far it has to travel, which is why the resting window is set by thickness rather than by the animal. A thin steak is seasoned through in an hour or two; a whole turkey breast is several inches thick at the keel and needs a day or more.
The visual cue is reliable. Immediately after salting, the surface goes wet as moisture is drawn out. Within an hour or two it looks tacky. By the time the brine has been reabsorbed the surface looks dry again and slightly translucent, and the meat feels firmer and less slippery. That dry-again stage is when it is ready to cook; catching the meat in the wet stage is the one way to make a dry brine actively worse than salting at the pan.
The upper end of the window is about surface texture, not safety. Left too long uncovered, the exterior of a small cut dries to leather and the outer few millimetres become noticeably salty. Larger cuts tolerate longer because the surface-to-volume ratio is lower. Refrigerate at or below 40 °F throughout; a dry brine is not a preservation step and gives you no extra time at unsafe temperatures.
Do not rinse, and do not salt again. Both mistakes come from wet-brine habits. And when you season the finishing sauce or gravy, taste it against the meat rather than salting to a familiar level — the meat is already carrying its full dose.

Teaspoon figures use 2.8, 4.8 and 6.0 g per teaspoon. Crystal size varies between batches, so weigh rather than measure whenever the total is under about 10 g.
Mistakes that spoil a dry brine
- Cooking during the wet stage. Between roughly 30 minutes and 2 hours the surface is wet with drawn-out moisture. Cook it then and you get poor browning and uneven seasoning. Go short — under 20 minutes — or long.
- Rinsing before cooking. That washes away the salt you carefully weighed and re-wets the surface you carefully dried. Rinsing belongs to wet brining and to salt-cured products, not here.
- Covering the meat during the rest. Plastic wrap traps the moisture at the surface and prevents the drying that gives you crisp skin. Uncovered on a rack, on the bottom shelf.
- Using a volume measure across brands. A tablespoon of table salt weighs more than twice a tablespoon of Diamond Crystal. Weigh, or at least use the conversion for the box you actually own.
- Salting a pre-brined or kosher-processed bird. Supermarket turkeys are frequently enhanced, self-basting or koshered, which means they arrive already salted. The label has to declare it — look for wording such as "contains up to X% of a solution" or "koshered" — and the declared percentage is solution, not salt. If either appears, skip the dry brine or cut it sharply, and taste before you add any salt at the table.
- Treating a dry brine as a cure. There is no nitrite involved and no preservation. Anything held for weeks, smoked at low temperature or dried needs the calculated cure instead.
Resting windows are practice, not a standard
The hour ranges this calculator suggests are the working conventions of professional kitchens, chosen so that salt has time to redistribute and the surface has time to dry. They are not a food-safety standard and there is no regulatory basis for them. What is not negotiable is the temperature: keep salted meat at or below 40 °F for the whole rest, and treat the total time in the refrigerator as part of the meat's normal storage life, not an extension of it.
Dry brine, wet brine, equilibrium cure: choosing the right one
All three techniques are salt applied to protein, and they differ in what carries the salt and what you are trying to achieve.
Wet brining submerges the meat in salted water — as a rule of thumb somewhere around 5% salt by weight of water — for a few hours. Uptake depends on time, concentration and the cut, so the final seasoning is an estimate rather than a number — and the meat gains water, which dilutes flavour and softens skin. It still has a place for very lean birds and pork chops where the added water is welcome.
Dry brining, the subject of this page, gives you an exact final concentration because nothing enters or leaves. It is the default for anything where you want crisp skin or a hard sear.
Equilibrium curing takes the same percentage logic further: the meat and a weighed cure go into a sealed bag together for days or weeks, and because nothing can escape, the meat ends at exactly the calculated concentration of both salt and sodium nitrite. That is how bacon and pancetta are made at home, and the ingoing nitrite figure there is a regulated quantity rather than a matter of taste.
