Three fluid ounces, and why they disagree

The fluid ounce is the only common unit whose name gives you no clue which one you are holding. Three versions circulate. The US fluid ounce is 29.5735295625 mL. The imperial fluid ounce, still used in the UK, Ireland and on Canadian recipes, is 28.4130625 mL — 4.08% smaller. The nutrition-label ounce on US packaging is a flat 30 mL, a rounding the FDA permits so that serving sizes come out in tidy metric numbers.

They disagree because they were derived from different things. The US ounce descends from the wine gallon of 231 cubic inches, divided into 128 parts. The imperial ounce descends from a gallon defined in 1824 as the volume of ten pounds of water, divided into 160 parts. Two different gallons, two different divisors, and the accident that both quotients landed within 4% of each other — which is precisely why the confusion survives. A unit wrong by a factor of two gets caught; a unit wrong by 4% does not.

Where does it actually bite? A British recipe calling for 10 fl oz of milk means 284 mL; read as US ounces you pour 296 mL, and a custard or a batter noticeably loosens. A Canadian cocktail recipe in ounces is usually imperial. A US pint is 16 fl oz (473 mL) while a UK pint is 20 imperial fl oz (568 mL), so the same word describes glasses 20% apart. And a US "cup" is 8 US fl oz, while a metric cup is 250 mL and an imperial cup is 284 mL.

Where each factor comes from

Both conversions are exact, and both can be derived rather than memorised.

The US fluid ounce. Federal law defines the US liquid gallon as exactly 231 cubic inches. There are 128 fluid ounces in that gallon, so one ounce is 231 ÷ 128 = 1.8046875 in³. An inch is exactly 2.54 cm, so a cubic inch is 2.54³ = 16.387064 cm³, which is 16.387064 mL. Multiply: 1.8046875 × 16.387064 = 29.5735295625 mL. Every digit is exact because every input to it is a definition.

The imperial fluid ounce. The UK Weights and Measures Act 1985 fixes the imperial gallon at exactly 4.54609 litres. There are 160 imperial fluid ounces in it, so one is 4,546.09 ÷ 160 = 28.4130625 mL. The 160 rather than 128 is the historical difference: the imperial system divided its gallon into 8 pints of 20 ounces, the US into 8 pints of 16.

The label ounce. US nutrition labelling expresses serving sizes in metric units, and the reference amounts for beverages are set in round millilitre figures — an 8 fl oz serving is declared as 240 mL rather than 236.6 mL. Treating the ounce as 30 mL is a labelling convention, not a measurement. It runs 1.44% high against the real US ounce, which matters for a dosing syringe and does not matter for a bowl of soup.

The ratio between the two real ounces is worth carrying in your head: 28.4130625 ÷ 29.5735295625 = 0.96076. So imperial ounces × 0.961 gives US ounces, and US ounces × 1.041 gives imperial ounces.

Worked example: a British recipe asking for 10 fl oz of stock

You are cooking from a UK cookbook that calls for 10 fl oz of chicken stock, and your measuring jug is marked in US cups and millilitres.

  1. Identify the ounce. The book is British, so these are imperial fluid ounces of 28.4130625 mL each.
  2. Convert to millilitres. 10 × 28.4130625 = 284.130625 mL. Round to 284 mL — and note that this is half an imperial pint, which is exactly what the recipe writer had in mind.
  3. Convert to US fluid ounces. 284.130625 ÷ 29.5735295625 = 9.608 US fl oz. So on a US jug you want a shade under 9⅝ ounces, not 10.
  4. Convert to US cups. 284.130625 ÷ 236.5882365 = 1.201 cups, so one cup plus about 3¼ tablespoons.
  5. See the size of the error you avoided. Had you poured 10 US fl oz you would have added 295.735 mL, which is 295.735 − 284.131 = 11.6 mL too much — 4.1% over, or about two and a third teaspoons.

Four per cent is invisible in a stew and decisive in a bread dough, a cocktail or a paediatric dose. The rule is to identify the ounce from the document's origin before you convert anything.

How to tell which ounce you are holding

Start with the source of the number. A US recipe, a US product label and an American bar spec are US fluid ounces. A UK or Irish recipe, a British pub measure and most older Canadian recipes are imperial. Australian and New Zealand recipes are metric and use a 250 mL cup and a 20 mL tablespoon, which is larger than everyone else's 15 mL tablespoon.

Then look at the round numbers. Imperial quantities land on round imperial figures: 5, 10 and 20 fl oz are a quarter, a half and a full imperial pint. US quantities land on 4, 8 and 16 — half a cup, a cup and a US pint. If a recipe asks for 10 fl oz, it is almost certainly imperial, because 10 is not a natural US quantity. If it asks for 12 fl oz, it is almost certainly US, because that is a standard can.

For medicine, ignore ounces entirely. Clinical dosing in every country is written in millilitres, and household spoons vary enough to matter. Where fluid-ounce conversions go wrong

  • Assuming every ounce is a US ounce. A UK recipe converted with 29.57 mL adds 4.1% to every liquid. In baking and cocktails that is the difference between a working formula and a loose one.
  • Confusing fluid ounces with weight ounces. A fluid ounce measures space; an avoirdupois ounce measures 28.3495 g of mass. They coincide only for water, and only approximately: one US fl oz of water weighs about 29.6 g, not 28.35 g.   • Assuming the cup is standard. The US cup is 236.6 mL, the metric cup 250 mL, the imperial cup 284 mL and the Japanese cup 200 mL. A recipe's cup follows its country of origin.
  • Rounding too early in a scaled recipe. Convert once at full precision and round at the end. Rounding each of eight ingredients to the nearest 5 mL can shift a dough's hydration by a percentage point.
