Why the same word means different amounts
Recipe measures were never standardised internationally, so each cooking tradition settled on its own values and kept the same names. The result is four cups and three tablespoons in common use, all differing by enough to matter in baking.
The US cup is defined through the fluid ounce: 8 US fl oz, which is 236.5882365 mL. Its subdivisions are exact fractions of that — a tablespoon is half an ounce (14.7868 mL) and a teaspoon a sixth of an ounce (4.9289 mL), so 3 teaspoons make a tablespoon and 16 tablespoons make a cup. Australia is the outlier that catches people out. Its teaspoon is 5 mL like everyone else's, but its tablespoon is 20 mL, four teaspoons rather than three. Converting through millilitres
Every conversion here works the same way: turn the quantity into millilitres using the source measure's size, then divide by the target measure's size. One multiplication, one division, and the millilitre value in the middle is the honest description of how much liquid you actually have.
That pivot matters because it stops you chaining approximations. Converting 3 Australian tablespoons to US teaspoons by remembering that "a tablespoon is three teaspoons" gives 9; going through millilitres gives 3 × 20 = 60 mL, and 60 ÷ 4.9289 = 12.2 US teaspoons. The shortcut's 9 is 26% short of that, because it uses the wrong tablespoon and the wrong teaspoon at the same time.
The exact US values come from the fluid ounce. A US fluid ounce is 231/128 cubic inches, which works out to 29.5735295625 mL. Halve it for a tablespoon, take a sixth for a teaspoon, take eight for a cup. Because those are exact fractions, the internal relationships within the US system are exact integers: 3 tsp = 1 tbsp, 2 tbsp = 1 fl oz, 16 tbsp = 1 cup, 2 cups = 1 pint. It is only when you cross into the metric family that awkward decimals appear, because 5 mL and 4.9289 mL are different by design.
The calculator also offers the answer as a fraction rounded to the nearest sixteenth, because kitchen sets are graduated in halves, thirds, quarters and eighths rather than in decimals. A converted figure of 1.0567 cups is more usefully read as "a cup plus one tablespoon" — 0.0567 cup is 0.907 tablespoon — than as four decimal places.
Worked example: an Australian recipe read with US measures
An Australian cake recipe calls for 1 cup of milk and 2 tablespoons of baking powder. Australian recipes use the metric 250 mL cup and the 20 mL tablespoon. Your kitchen has US measures.
- The milk. 1 metric cup = 250 mL. In US cups: 250 ÷ 236.5882365 = 1.0567 US cups. That is a cup plus 0.0567 × 16 = 0.91 tablespoon, so measure one US cup plus a scant tablespoon.
- The baking powder. 2 Australian tablespoons = 2 × 20 = 40 mL. In US tablespoons: 40 ÷ 14.78676 = 2.706 US tbsp, or 8.12 US teaspoons.
- What the shortcut would have cost you. Measuring 2 US tablespoons instead gives 29.57 mL against the 40 mL intended — 26.1% short on the leavening, which is exactly the kind of error that produces a flat cake.
- Practical rounding. 2.706 US tbsp is 2 tablespoons plus 0.706 × 3 = 2.12 teaspoons, so measure 2 tablespoons and 2 teaspoons and you are within 1.5% of the intended amount.
- Cross-check. 2 tbsp + 2 tsp in US measures is (2 × 14.78676) + (2 × 4.92892) = 29.573 + 9.858 = 39.43 mL against 40 mL. Confirmed.
Deciding which cup a recipe means
Go by where the recipe was written. American sources use the 236.59 mL cup, the 14.79 mL tablespoon and the 4.93 mL teaspoon. British, European and New Zealand sources use 250 mL, 15 mL and 5 mL. Australian sources use 250 mL and 5 mL but the 20 mL tablespoon. Canadian recipes are mixed, with older ones often imperial and newer ones metric.
Then ask whether the difference matters for that ingredient. The four cups span 236.59 to 284.13 mL, a 20% range, but the consequence depends entirely on the role of the ingredient. Stock in a soup, oil in a pan or vegetables in a stew tolerate 20% without comment. Flour, liquid and leavening in a cake do not, because baking is a ratio problem: change one component's share and the structure changes. Mistakes that spoil a converted recipe
- Assuming a tablespoon is three teaspoons everywhere. It is four in Australia. Convert through millilitres rather than through the spoon-to-spoon ratio.
